  • 1 teaspoon Vanilla
  • 1 teaspoon Pumpkin pie spice
  • 1/8 teaspoon Sea salt
  • 4 sheets Graham cracker sheets
  • 1 cup Whipped topping or Greek yogurt (Your choice for a luscious finish)

Instructions

  1. In a high-powered blender or food processor, combine non-dairy milk, pumpkin puree, chia seeds, maple syrup, vanilla, pumpkin pie spice, and sea salt. Blend on high until smooth, adjusting the sweetness to your liking.
  2. Transfer the blended mixture into a resealable container. Cover it tightly and refrigerate for 3-4 hours, allowing the chia seeds to absorb liquid and thicken the mousse into a creamy delight.
  3. Crush the graham cracker sheets by processing them in a mini-chopper or placing them in a plastic bag and rolling over them with a rolling pin.
  4. Scoop about 1/2 cup of the chilled mousse into small ramekins. Top each with a sprinkle of the crushed graham crackers and a dollop of whipped topping or Greek yogurt if desired. Keep them refrigerated until ready to serve.
