- 1 cup Canned pumpkin or homemade pumpkin puree
- 1/4 cup Chia seeds
- 1/4 cup Pure maple syrup (Adjust based on taste preferences)
- 1 teaspoon Vanilla
- 1 teaspoon Pumpkin pie spice
- 1/8 teaspoon Sea salt
- 4 sheets Graham cracker sheets
- 1 cup Whipped topping or Greek yogurt (Your choice for a luscious finish)
Instructions
- In a high-powered blender or food processor, combine non-dairy milk, pumpkin puree, chia seeds, maple syrup, vanilla, pumpkin pie spice, and sea salt. Blend on high until smooth, adjusting the sweetness to your liking.
- Transfer the blended mixture into a resealable container. Cover it tightly and refrigerate for 3-4 hours, allowing the chia seeds to absorb liquid and thicken the mousse into a creamy delight.
- Crush the graham cracker sheets by processing them in a mini-chopper or placing them in a plastic bag and rolling over them with a rolling pin.
- Scoop about 1/2 cup of the chilled mousse into small ramekins. Top each with a sprinkle of the crushed graham crackers and a dollop of whipped topping or Greek yogurt if desired. Keep them refrigerated until ready to serve.
