- 1 lb fresh tomatillos (husked and chopped)
- 1 cup fresh cilantro (chopped)
- 1 can (4 oz) diced green chiles
- 4 cloves garlic (minced)
- 2 tbsp lime juice
- Salt and pepper to taste
- Water or broth (enough to cover)
Instructions
- Season the pork shoulder with salt and pepper. In a large pot, heat oil over medium heat and sauté chopped onions until translucent.
- Add tomatillos and green chiles; cook until softened, about 5-7 minutes.
- Pour in enough water or broth to cover the ingredients by an inch. Bring to a boil, then reduce heat and simmer for 1.5 hours until the pork is tender.
- Stir in chopped cilantro and lime juice. Simmer for an additional 10 minutes.
- Ladle into bowls and garnish with optional toppings like radishes or avocado slices.
