  • 2 lbs pork shoulder (bone-in, cut into large chunks)
  • 1 lb fresh tomatillos (husked and chopped)
  • 1 cup fresh cilantro (chopped)
  • 1 can (4 oz) diced green chiles
  • 4 cloves garlic (minced)
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Water or broth (enough to cover)

Instructions

  1. Season the pork shoulder with salt and pepper. In a large pot, heat oil over medium heat and sauté chopped onions until translucent.
  2. Add tomatillos and green chiles; cook until softened, about 5-7 minutes.
  3. Pour in enough water or broth to cover the ingredients by an inch. Bring to a boil, then reduce heat and simmer for 1.5 hours until the pork is tender.
  4. Stir in chopped cilantro and lime juice. Simmer for an additional 10 minutes.
  5. Ladle into bowls and garnish with optional toppings like radishes or avocado slices.
