Description

A foolproof festive cake combining rich chocolate, coffee depth, and cool peppermint for a delicious holiday treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 cup boiling water
  • Peppermint frosting (to taste)
  • Crushed peppermint candies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa, baking powder, and salt.
  3. Add milk, oil, eggs, vanilla, and peppermint extract. Beat until smooth.
  4. Stir in boiling water until well combined.
  5. Pour batter evenly into prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Frost with peppermint frosting and sprinkle crushed peppermint on top.

Notes

This cake can be made ahead of time and freezes well. Adjust peppermint flavor to taste.
