Description

This one-pot autumn beef stew is a hearty and comforting dish perfect for chilly weather. It features tender beef, nutritious vegetables, and fragrant herbs, all cooked together in a single pot for easy cleanup and maximum flavor. Celebrate the season with this simple yet delicious fall classic.

Ingredients

Scale
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced into rounds
  • 3 stalks celery, chopped
  • 4 medium potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
  2. Sauté Vegetables: In the same pot, add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes.
  3. Add Carrots and Celery: Add the sliced carrots and chopped celery to the pot. Cook for about 3-4 minutes until they start to soften.
  4. Deglaze the Pot: Pour in a splash of beef broth while scraping the bottom of the pot to deglaze and release any flavorful bits stuck to the bottom.
  5. Combine Ingredients: Return the browned beef to the pot, along with the diced potatoes. Add the tomato paste, thyme, rosemary, bay leaf, and remaining beef broth. Stir well to combine.
  6. Season: Add salt and pepper to taste. Bring the mixture to a boil.
  7. Simmer: Reduce the heat to low, cover, and let it simmer for about 1 hour or until the beef is tender and the flavors meld together.
  8. Adjust Seasoning: After simmering, taste the stew and adjust seasoning if necessary.
  9. Garnish: Before serving, remove the bay leaf and garnish the stew with chopped fresh parsley.
  10. Serve Warm: Ladle the beef stew into bowls and enjoy!

Notes

  • For a richer flavor, consider using fresh thyme and rosemary instead of dried.
  • Properly searing the beef is crucial for depth of flavor.
  • Allow the stew to rest for 10 minutes after cooking for flavors to meld.
  • A splash of red wine can be added after sautéing onions for extra richness.
  • Feel free to add other spices like smoked paprika or a pinch of cayenne for heat.
  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 10 minutes of cooking.
  • This recipe is naturally gluten-free if gluten-free beef broth is used.
