Instructions

  1. In a 12-ounce (or larger) mug, whisk together the milk, olive oil, and sugar until well combined and smooth.
  2. Whisk in the flour until the batter is smooth. Then stir in the rolled oats, finely chopped pecans, baking powder, salt, and optional spices like cinnamon and nutmeg if using.
  3. Place a tablespoon of Nutella on top of the batter and gently push it down so it becomes partially submerged in the cake mixture.
  4. Microwave on HIGH for 30 seconds initially. Then continue microwaving in 15-second bursts, checking after each, until the top looks dry, cooked through, and springs back when lightly pressed with a finger. Depending on your microwave power, this will take about 70 to 90 seconds total.
  5. Let the mug cake stand for at least 5 minutes before eating, as the cake and Nutella center will be hot. For extra indulgence, top with additional Nutella or chopped pecans before serving.
