- 1 tsp vanilla extract
- 1 cup heavy cream, chilled

Instructions
- Prepare the crust by crushing graham crackers or gingerbread cookies and mixing with melted butter. Press into the bottom of serving cups.
- In a bowl, beat cream cheese until smooth. Gradually add powdered sugar and gingerbread spice, mixing well.
- Fold in whipped cream and vanilla extract until combined.
- Layer the cheesecake filling over the crust in the cups and top with additional whipped cream.
- Chill in the refrigerator for at least 2 hours before serving.
