Instructions
- Preheat your oven to 350°F (175°C).
- Grease a tartlet pan or line with parchment paper.
- In a food processor, pulse the pistachios until finely ground.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually incorporate the ground pistachios, flour, salt, and baking powder, mixing until the dough forms.
- Divide the dough evenly. Press the dough into the tartlet pan, creating a small lip along the edges.
- Bake for 12-15 minutes, or until the mini pistachio tartlets are golden brown.
- Allow the tartlets to cool completely before serving.
