Ingredients
Scale
- 2 cups (250 g) all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- 1 cup (200 g) granulated sugar
- ½ cup (115 g) unsalted butter, softened
- 2 large eggs
- 1 cup (240 ml) milk (whole milk preferred)
- 2 tsp vanilla extract
- Optional Glaze or Topping:
- ½ cup (60 g) powdered sugar
- 1–2 tbsp milk or lemon juice
- Fresh berries, whipped cream, or powdered sugar for serving
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×9-inch baking pan.
- In a bowl, whisk flour, baking powder, and salt together.
- In another bowl, beat butter and sugar until light and fluffy, about 2–3 minutes.
- Mix in eggs one at a time, then add vanilla extract.
- Alternate adding dry ingredients and milk in three parts, mixing just until smooth. Do not overmix.
- Pour batter into the pan, smooth the top, and bake for 30–35 minutes, or until a toothpick comes out clean.
- Let cool 10 minutes in the pan, then transfer to a rack. Dust with powdered sugar or drizzle glaze before serving.
Notes
- Use room-temperature ingredients for the best texture.
- Don’t overmix the batter — this keeps the cake light and fluffy.
- Measure flour correctly by spooning and leveling.
- Add lemon or orange zest for extra brightness.
- For richer flavor, replace ¼ cup of milk with sour cream or yogurt.
