Description

This Melt-in-Your-Mouth Cake is a soft, buttery, and budget-friendly dessert that truly lives up to its name. Made with simple pantry ingredients, it’s light, fluffy, and irresistibly tender — perfect for any occasion, from afternoon tea to family gatherings.

Ingredients

Scale
  • 2 cups (250 g) all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (200 g) granulated sugar
  • ½ cup (115 g) unsalted butter, softened
  • 2 large eggs
  • 1 cup (240 ml) milk (whole milk preferred)
  • 2 tsp vanilla extract
  • Optional Glaze or Topping:
  • ½ cup (60 g) powdered sugar
  • 12 tbsp milk or lemon juice
  • Fresh berries, whipped cream, or powdered sugar for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×9-inch baking pan.
  2. In a bowl, whisk flour, baking powder, and salt together.
  3. In another bowl, beat butter and sugar until light and fluffy, about 2–3 minutes.
  4. Mix in eggs one at a time, then add vanilla extract.
  5. Alternate adding dry ingredients and milk in three parts, mixing just until smooth. Do not overmix.
  6. Pour batter into the pan, smooth the top, and bake for 30–35 minutes, or until a toothpick comes out clean.
  7. Let cool 10 minutes in the pan, then transfer to a rack. Dust with powdered sugar or drizzle glaze before serving.

Notes

  • Use room-temperature ingredients for the best texture.
  • Don’t overmix the batter — this keeps the cake light and fluffy.
  • Measure flour correctly by spooning and leveling.
  • Add lemon or orange zest for extra brightness.
  • For richer flavor, replace ¼ cup of milk with sour cream or yogurt.
