Description

Mediterranean stuffed sweet potatoes are a vibrant, nutrient-packed meal that pairs naturally sweet roasted sweet potatoes with bold, tangy Mediterranean fillings.


Ingredients

  • 4 medium sweet potatoes
  • 1 (14 oz) can chickpeas, drained and rinsed
  • ½ English cucumber, diced
  • 2 roma tomatoes, diced
  • ¼ cup kalamata olives, chopped
  • ¼ cup roasted red peppers, diced
  • ¼ cup marinated artichokes, chopped
  • Juice of ½ lemon
  • Splash of olive oil
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • ¼ tsp oregano
  • ¼ tsp salt

Instructions

  1. Preheat oven to 400°F (200°C). Rinse and scrub the sweet potatoes, then pierce each one several times with a fork. Place on a baking sheet and bake 45–60 minutes, or until tender when pierced with a fork.
  2. Toss chickpeas with olive oil and seasonings (garlic powder, cayenne, oregano, and salt). Spread on a lined baking sheet and roast about 20 minutes until golden and slightly crispy, flipping halfway.
  3. Dice the cucumber, tomatoes, olives, roasted red peppers, and artichokes into small pieces.
  4. In a bowl, combine diced vegetables with a splash of olive oil, lemon juice, and a pinch of salt. Chill briefly in the fridge to let flavors meld.
  5. When the sweet potatoes are done, cool slightly. Slice each open lengthwise and gently push the insides to create a pocket for filling.
  6. Fill each sweet potato with the Mediterranean vegetable mixture, top with roasted chickpeas, and sprinkle with crumbled feta.
  7. Serve warm. Optional: add a tahini or yogurt drizzle for extra flavor.
