Description

These meal prep breakfast sandwiches are freezer-friendly, packed with protein, and made with fluffy eggs, sausage, and melty cheese on an English muffin. The perfect grab-and-go breakfast for busy mornings!


Ingredients

  • 6 English muffins, cut in half
  • 6 large eggs
  • 3 slices of bacon, cut in half
  • 3 sausage patties
  • 6 slices of cheese (Gouda)
  • Salt and pepper, to taste
  • Butter or cooking spray (for greasing the pan)

Instructions

  1. Cook the meats: Cook bacon in a skillet until crispy. In the same pan, cook sausage patties until browned. Set aside.
  2. Cook the eggs: Grease a non-stick pan or egg rings. Crack in the eggs, season, and cook until set. For firmer yolks, flip and cook 1–2 more minutes.
  3. Assemble the sandwiches: Layer cheese on the bottom of each English muffin, add an egg, and top 3 with bacon, 3 with sausage. Add muffin tops.
  4. Wrap & freeze: Wrap sandwiches in parchment paper and store in a freezer bag or airtight container for up to 3 months.
  5. Reheat & eat: Microwave unwrapped sandwiches in a paper towel for 1–2 minutes, or bake at 350°F (175°C) for 20 minutes.
