Ingredients

- 1 cup granulated sugar
- 1/2 cup fresh basil leaves
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, room temperature
- 1 tablespoon vanilla bean paste
- 1 lemon, zested
- 1 whole egg
- 1 egg yolk
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, and salt.
- Combine sugar and basil in a food processor; pulse until finely ground.
- In a stand mixer, beat butter and basil sugar mixture until light and fluffy.
- Gradually incorporate vanilla bean paste, lemon zest, whole egg, and egg yolk into the mixture.
- Slowly add the dry ingredients, mixing until just combined.
- Portion cookie dough onto a parchment-lined baking tray.
- Roll each cookie dough ball in basil sugar.
- Bake for 8-9 minutes, until the edges are set and the centers appear slightly underbaked.
- Cool on the baking tray for 5-10 minutes before transferring to a wire rack.
Notes
Chill dough for 15-30 minutes if very soft to control spread. Can replace fresh basil with dried basil or lemon thyme if needed.
