Description

Savory Korean Gochujang Roast Chicken is a flavor-packed dish featuring spicy Gochujang, perfect for impressing guests.


Ingredients

  • 1 cup Korean Gochujang Paste
  • 1/2 cup Neutral Vegetable Oil
  • 1/4 cup Oyster Sauce
  • 1/4 cup Light Soy Sauce
  • 2 tablespoons White Granulated Sugar
  • 2 tablespoons White Rice Vinegar
  • 2 tablespoons Mirin
  • 1 tablespoon Sesame Oil
  • 3 cloves Garlic (minced)
  • 1.5 inches Ginger (grated)
  • 1 whole (2-3 pounds) Whole Chicken

Instructions

  1. In a mixing bowl, combine the Korean Gochujang paste, vegetable oil, oyster sauce, soy sauce, sugar, rice vinegar, mirin, sesame oil, minced garlic, and grated ginger. Whisk until well-blended and smooth.
  2. Place your whole chicken in a large zip-top bag or a bowl. Pour the marinade over the chicken, ensuring it’s fully coated. Seal the bag or cover the bowl and marinate it in the refrigerator for 8-16 hours, preferably overnight.
  3. About 30 minutes before baking, take the marinated chicken out of the fridge to bring it to room temperature.
  4. Preheat your oven to 356°F (180°C) or 160°C for fan-assisted ovens.
  5. Place the chicken on a roasting pan. Bake uncovered for 30 minutes, then cover with aluminum foil. Roast for another hour, or until the juices run clear.
  6. Once done, remove the chicken from the oven and let it rest for 15-20 minutes.
  7. For an extra crispy skin, broil the chicken for 1-2 minutes after applying additional boiled-down marinade.
