Ingredients

Scale
  • 1 1/2 cups All-Purpose Flour
  • 1 cup Sugar
  • 1/3 cup Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 large Egg, room temperature
  • 1/2 cup Buttermilk, room temperature
  • 1/2 cup Coffee, hot
  • 1/4 cup Vegetable Oil
  • 1 1/2 teaspoon Vanilla Extract
  • 12 Kit Kats, half crushed, half cut into quarters
  • 1 cup Butter, room temperature
  • 4 cups Powdered Sugar
  • 2 teaspoon Vanilla Extract
  • 2 Tablespoons Heavy Cream
  • Kit Kat bars (from cupcake quantity), crushed as specified

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with cupcake liners to get ready for baking.
  2. Place half of the Kit Kat bars into a sealed Ziploc bag and crush them using a rolling pin; these will be mixed into the batter for delightful chunks of chocolate.
  3. In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt to combine the dry elements evenly.
  4. In a separate bowl, whisk together the egg, buttermilk, hot coffee, vegetable oil, and vanilla extract until smooth and well blended.
  5. Gradually add the dry ingredients to the wet ingredients using a mixer set on medium speed; mix for about 2 minutes and scrape down the sides as needed to ensure thorough incorporation.
  6. Gently fold the crushed Kit Kat pieces into the batter, distributing them evenly without overmixing.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake the cupcakes for 13 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let them cool completely before frosting.
  9. Using a stand mixer with a paddle attachment, beat the softened butter on medium speed until light and creamy, about 2–3 minutes.
  10. Add powdered sugar, vanilla extract, and heavy cream to the butter and mix on low speed until combined and smooth.
  11. Add the crushed Kit Kat pieces to the frosting and increase the mixer speed to medium-high, whipping the frosting for 3–4 minutes until fluffy.
  12. Transfer the frosting to a decorating bag and pipe it generously onto the cooled cupcakes.
  13. Top each cupcake with quarters of Kit Kat bars and drizzle with fudge sauce if desired for an extra special look and flavor.
