- 1 cup Unsweetened almond milk
- 1/2 cup Plain Greek yogurt
- 1/4 cup Fresh lime juice
- 1 cup All-purpose flour
- 1/2 cup Graham crackers
- 2 tablespoons Sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Baking soda
- 1/4 teaspoon Salt
- 2 tablespoons Coconut oil (melted and cooled)
- 2 large Eggs
- 1 cup Heavy whipping cream
- 2 tablespoons Powdered sugar
- 1 teaspoon Pure vanilla extract
Instructions
- Whisk together the almond milk, Greek yogurt, and lime juice in a medium-large bowl until smooth. Let it sit for a few minutes to thicken.
- Crush the graham crackers into fine crumbs using a rolling pin or a food processor.
- Combine in a separate bowl the flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt. Stir well.
- Heat up your griddle or skillet over medium heat and lightly grease it.
- Add the melted coconut oil and eggs to the thickened wet ingredients. Whisk until fully incorporated.
- Incorporate the dry ingredients into the wet mix by sifting 1/3 of the flour mixture into the bowl, gently stirring to combine.
- Spoon the batter onto your hot, lightly greased griddle using a 1/3 cup measuring cup. Cook until bubbles form on the tops and gently pop.
- Flip the pancakes carefully and let them brown on the other side.
- Whip the heavy cream until soft peaks form. Gently mix in a drop of vanilla extract and add fresh lime zest.
- Dollop the whipped cream on top of the warm pancakes. Sprinkle with crushed graham crackers.
