Delightful Key Lime Pie Pancakes for a Zesty Breakfast Boost


Ingredients

  • 1 cup Unsweetened almond milk
  • 1/2 cup Plain Greek yogurt
  • 1/4 cup Fresh lime juice
  • 1 cup All-purpose flour
  • 1/2 cup Graham crackers
  • 2 tablespoons Sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 2 tablespoons Coconut oil (melted and cooled)
  • 2 large Eggs
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Pure vanilla extract

Instructions

  1. Whisk together the almond milk, Greek yogurt, and lime juice in a medium-large bowl until smooth. Let it sit for a few minutes to thicken.
  2. Crush the graham crackers into fine crumbs using a rolling pin or a food processor.
  3. Combine in a separate bowl the flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt. Stir well.
  4. Heat up your griddle or skillet over medium heat and lightly grease it.
  5. Add the melted coconut oil and eggs to the thickened wet ingredients. Whisk until fully incorporated.
  6. Incorporate the dry ingredients into the wet mix by sifting 1/3 of the flour mixture into the bowl, gently stirring to combine.
  7. Spoon the batter onto your hot, lightly greased griddle using a 1/3 cup measuring cup. Cook until bubbles form on the tops and gently pop.
  8. Flip the pancakes carefully and let them brown on the other side.
  9. Whip the heavy cream until soft peaks form. Gently mix in a drop of vanilla extract and add fresh lime zest.
  10. Dollop the whipped cream on top of the warm pancakes. Sprinkle with crushed graham crackers.
