Ingredients

  • 1 cup Parmesan Cheese (Aged Parmesan for better flavor.)
  • 1 cup Panko Breadcrumbs (Regular breadcrumbs can be swapped.)
  • 2 large Eggs (No direct substitutes recommended.)
  • 4 cloves Minced Garlic (Adjust amount for desired garlic intensity.)
  • 1 tsp Garlic Powder (Feel free to modify to taste.)
  • 1 tsp Onion Powder (Can omit if preferred.)
  • 1 tsp Dried Basil (Fresh herbs can be used.)
  • 1 tsp Dried Parsley (Fresh herbs can be used.)
  • 1 tsp Salt (Tailor to dietary needs.)
  • 1 tsp Black Pepper (Tailor to dietary needs.)
  • 1/2 cup Whole Milk (Plant-based milk works for dairy-free.)
  • 1 tbsp Unsalted Butter (Margarine can be used as a substitute.)
  • 1/4 cup Additional Parmesan (Optional for extra flavor.)
  • 2 tbsp Fresh Parsley (Optional for garnish.)

Instructions

  1. Preheat your oven to 190°C (375°F) and get a baking sheet or loaf pan ready.
  2. Combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, parsley, salt, black pepper, and whole milk in a large bowl.
  3. Shape the mixture into a loaf and place it in the prepared baking pan.
  4. Bake for 40-45 minutes until the internal temperature reaches 74°C (165°F).
  5. Prepare the garlic-parmesan glaze by melting the unsalted butter in a small saucepan over low heat.
  6. Brush the glaze over the meatloaf and return it to the oven for an additional 5-7 minutes.
  7. Rest the meatloaf for 5 minutes after removing from the oven.
  8. Slice the meatloaf, garnish with fresh parsley, and serve.
