  • 3 bags Jasmine tea (Use more for a stronger flavor.)
  • 1 cup Hot water (For steeping the tea.)
  • 5 large Eggs (Ensure they’re at room temperature.)
  • 1 teaspoon Cream of tartar (Stabilizes egg whites.)
  • 150 grams Granulated sugar (Divided for different stages.)
  • 70 ml Light-tasting oil (Keeps the cake moist.)
  • 1 teaspoon Vanilla extract (Adds warmth to the flavor.)
  • 120 grams Cake flour
  • 1 teaspoon Baking powder (Ensures proper rising.)
  • 300 ml Whipping cream (Use heavy cream for best results.)
  • 50 grams Powdered sugar (Adds sweetness.)
  • 1 teaspoon Vanilla extract (Enhances flavor.)
  • 200 grams Quartered green grapes (For decorating the cake.)
  • 100 grams Halved or finely chopped green grapes (Adjust based on preference.)

Instructions

  1. Preheat your oven to 350°F and line a 9×13″ pan with parchment paper.
  2. Pour hot water over 3 jasmine tea bags and cover. Steep for 10 minutes, then set aside to cool.
  3. In a small bowl, combine cake flour and baking powder. Cut open the remaining 2 jasmine tea bags and add the tea leaves.
  4. Separate the egg whites into one bowl and yolks into another.
  5. Add cream of tartar to egg whites and beat until frothy.
  6. Gradually add 100g of sugar to egg whites until stiff peaks form.
  7. In the yolks bowl, add the remaining 50g of sugar, cooled jasmine tea, light oil, and vanilla extract. Mix until combined.
  8. Sift the dry flour mixture into the egg yolk blend and stir gently.
  9. Fold in about ⅓ of the meringue to the yolk mixture until no streaks are visible.
  10. Transfer the batter to the lined pan and spread evenly.
  11. Bake for about 25-27 minutes until lightly browned around the edges.
  12. Let the cake cool on a wire rack, then cut into 3 layers using a 6″ ring.
  13. Beat whipping cream, powdered sugar, and vanilla extract until firm peaks form.
  14. Position the 6″ cake ring on a cake board and fit with an acetate sheet. Place the first cake layer inside.
  15. Arrange quartered grapes against the acetate around the edges and sprinkle halved grapes in the center.
  16. Spread a layer of whipped cream over the grapes, then add the second cake layer and repeat.
  17. Top with the last cake layer and add a generous layer of whipped cream.
  18. Decorate the top with remaining whipped cream and halved grapes. Chill in refrigerator for at least 4 hours.
