Description

This jammy egg avocado pesto toast is a café-style breakfast or brunch made with creamy avocado, vibrant pesto, and perfectly cooked jammy eggs on crisp sourdough.


Ingredients

  • 2 large eggs
  • 2 slices sourdough or favorite bread
  • 1 ripe avocado
  • 2 Tbsp pesto (store-bought or homemade)
  • Salt, to taste
  • Black pepper, to taste
  • Optional toppings: chili flakes, lemon zest, microgreens, grated Parmesan

Instructions

  1. Bring a saucepan of water to a gentle boil. Add eggs and cook for exactly 7 minutes for a jammy center.
  2. Transfer eggs to an ice bath for 5 minutes, then peel carefully.
  3. Toast bread slices until golden and crisp.
  4. Scoop avocado into a bowl, mash lightly, and season with salt and pepper.
  5. Spread avocado on toast, spoon pesto on top, then halve eggs and place over toast.
  6. Garnish with optional toppings and serve immediately.
