Description

This Jalapeno Popper Cauliflower Casserole combines creamy richness, spicy jalapeños, and melty cheese for a delicious low-carb meal.


Ingredients

  • 1 head Cauliflower (Choose firm and compact heads.)
  • 8 oz Cream Cheese (Can substitute with Greek yogurt.)

  • 2 medium Jalapeños (Adjust seeds for desired heat.)
  • 4 slices Bacon (Can substitute with turkey bacon or omit.)
  • 1 cup Shredded Cheddar Cheese (Experiment with different cheese types.)
  • 2 tbsp Green Onions (Finely chopped for garnish.)
  • 1 cup Sour Cream (For serving.)

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Spread cauliflower florets evenly on a baking sheet and roast for 15 minutes.
  3. Reduce the oven temperature to 375°F (190°C).
  4. Transfer roasted cauliflower to a mixing bowl, add cream cheese, salt, and pepper; mix until well coated.
  5. Pour the mixture into a baking dish and distribute jalapeños and crumbled bacon on top.
  6. Sprinkle shredded cheddar cheese generously over the surface.
  7. Bake at 375°F (190°C) for an additional 15 minutes.
  8. Remove from the oven and let it cool for 5-10 minutes before serving.
  9. Garnish with finely chopped green onions if desired.
