Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced thick
  • 1 medium red onion, cut into wedges
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup hummus (store-bought or homemade)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chickpeas, bell peppers, zucchini, and red onion. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss until well coated.
