- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1/2 cup pure honey
- 1/2 cup crumbled feta cheese
- 1/4 cup freshly squeezed lemon juice
- 4 garlic cloves, minced
- 2 tsp dried oregano
- 3 tbsp olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a bowl, whisk together honey, lemon juice, garlic, olive oil, oregano, salt, and pepper.
- Place chicken in a zip-top bag or dish and pour the marinade over it. Refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C) or grill to medium-high heat.
- Remove the chicken from the marinade and sprinkle crumbled feta on top.
- Bake in a greased dish for 25-30 minutes or grill for about 6-8 minutes per side until cooked through (internal temperature should reach 165°F).
- Allow the chicken to rest for five minutes before slicing and serve with fresh herbs.
