Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup pure honey
  • 1/2 cup crumbled feta cheese
  • 1/4 cup freshly squeezed lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together honey, lemon juice, garlic, olive oil, oregano, salt, and pepper.
  2. Place chicken in a zip-top bag or dish and pour the marinade over it. Refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) or grill to medium-high heat.
  4. Remove the chicken from the marinade and sprinkle crumbled feta on top.
  5. Bake in a greased dish for 25-30 minutes or grill for about 6-8 minutes per side until cooked through (internal temperature should reach 165°F).
  6. Allow the chicken to rest for five minutes before slicing and serve with fresh herbs.
