Harissa Roasted Carrots with Tahini Sauce


Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp harissa paste
  • 2 tbsp extra virgin olive oil
  • 1/4 cup tahini
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix harissa paste and olive oil until smooth.
  3. Toss carrot sticks in the harissa mixture until well coated.
  4. Spread carrots on a parchment-lined baking sheet and roast for 25-30 minutes until tender and crispy.
  5. While roasting, combine tahini, lemon juice, water, salt, and pepper in another bowl until creamy.
  6. Drizzle the tahini sauce over the roasted carrots before serving.
