Harissa Roasted Carrots with Tahini Sauce
Ingredients

- 1 lb carrots, peeled and cut into sticks
- 3 tbsp harissa paste
- 2 tbsp extra virgin olive oil
- 1/4 cup tahini
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix harissa paste and olive oil until smooth.
- Toss carrot sticks in the harissa mixture until well coated.
- Spread carrots on a parchment-lined baking sheet and roast for 25-30 minutes until tender and crispy.
- While roasting, combine tahini, lemon juice, water, salt, and pepper in another bowl until creamy.
- Drizzle the tahini sauce over the roasted carrots before serving.
