Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz cream cheese, softened
  • 3 large eggs, room temperature
  • 1 cup eggnog (store-bought or homemade)
  • 2 tsp vanilla extract
  • ½ tsp nutmeg (preferably freshly grated)
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until combined. Press mixture into the bottom of a greased springform pan.
  2. In another bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add sugar and mix until incorporated.
  3. Add eggs one at a time, mixing well after each addition. Stir in eggnog, vanilla extract, nutmeg, and cinnamon until fully combined.
  4. Pour filling over crust and smooth the top with a spatula. Bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Allow cheesecake to cool at room temperature before refrigerating for at least four hours or overnight. Serve chilled.
