- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 24 oz cream cheese, softened
- 3 large eggs, room temperature
- 1 cup eggnog (store-bought or homemade)
- 2 tsp vanilla extract
- ½ tsp nutmeg (preferably freshly grated)
- ½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until combined. Press mixture into the bottom of a greased springform pan.
- In another bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add sugar and mix until incorporated.
- Add eggs one at a time, mixing well after each addition. Stir in eggnog, vanilla extract, nutmeg, and cinnamon until fully combined.
- Pour filling over crust and smooth the top with a spatula. Bake for 50-60 minutes until set but slightly jiggly in the center.
- Allow cheesecake to cool at room temperature before refrigerating for at least four hours or overnight. Serve chilled.
