- 2 cups cooked rice (white or brown)
- 1 pound boneless, skinless chicken thighs or breasts
- 1 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Cook the rice according to package instructions. Set aside.
- In a bowl, combine the chicken with olive oil, garlic powder, onion powder, salt, and pepper. Mix well and let it marinate for about 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once the chicken is cooked, pour the honey BBQ sauce over the chicken. Stir to coat evenly and let it simmer for about 5 minutes, allowing the sauce to thicken slightly.
- In a large bowl, add the cooked rice. Pour the chicken and BBQ sauce mixture over the rice and gently stir to combine.
- Transfer the Honey BBQ Chicken Rice to a serving dish. Top with chopped green onions and sesame seeds if desired.
