  • 1 teaspoon smoked paprika

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the sausage, breaking it into small pieces, and cook until browned (about 5-7 minutes).
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent (about 3-4 minutes).
  3. Add the diced potatoes to the sausage mixture. Stir well to combine.
  4. Slowly add the chicken or vegetable broth to the pot. Bring the mixture to a boil.
  5. Stir in the dried thyme, smoked paprika, salt, and pepper.
