- 1 to 1.5 pounds large shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Zest of 1 lemon
- Salt and black pepper to taste
- 1/2 cup unsalted butter
- 12 cloves garlic, finely minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, finely chopped
- Juice of 1/2 lemon
- Wooden or metal skewers (soak wooden ones in water for 30 minutes)
Instructions
- Whisk together olive oil, lemon juice, Dijon mustard, 4 minced garlic cloves, garlic powder, oregano, lemon zest, salt, and pepper in a bowl. Add shrimp, toss to coat, and marinate for 30 minutes at room temperature or up to overnight in the fridge.
- Thread marinated shrimp onto skewers. Preheat grill to medium-high heat (350-400°F). Grill skewers for 4-5 minutes per side until shrimp are opaque and just cooked through.
- While grilling, melt butter in a saucepan over medium-low heat, stir in 12 minced garlic cloves and cook for 30 seconds. Remove from heat and whisk in Parmesan, parsley, lemon juice, salt, and pepper.
- Brush grilled shrimp with warm garlic butter sauce. Serve immediately with lemon wedges and extra sauce on the side.
