Description
This goat cheese grilled cheese with honey is a sweet-and-savory gourmet twist on the classic sandwich—tangy, creamy goat cheese melted between crispy buttery bread, finished with a drizzle of golden honey.

- 4 slices thick sourdough or French bread
- 6 oz goat cheese (soft, fresh variety)
- 2–3 tsp honey, plus extra for drizzling
- 2 tsp butter, softened
- Pinch of black pepper (optional)
Instructions
- Spread butter evenly on one side of each bread slice (these will be the outside).
- On the unbuttered side of two slices, spread a generous layer of goat cheese.
- Drizzle 1 to 1.5 teaspoons of honey over the goat cheese on each slice. Sprinkle with black pepper if using.
- Top with the remaining bread slices, buttered side out, to form two sandwiches.
- Heat a skillet over medium-low heat. Cook until the bottom is golden brown, about 3–4 minutes.
- Flip carefully and cook until the other side is golden and the goat cheese is warm and slightly melty, about 2–3 minutes.
- Remove from heat and let sit for 1–2 minutes.
- Slice, drizzle with extra honey if desired, and serve warm.
