- 24 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 cup granulated sugar
- 4 large eggs
Instructions
- Preheat your oven to 325°F (163°C) and grease your springform pan.
- In a bowl, combine the graham cracker crumbs, dark brown sugar, molasses, melted butter, and spices until well mixed.
- Press the mixture evenly into the bottom and slightly up the sides of the pan.
- In another bowl, beat the cream cheese until fluffy, then gradually add the sugar and eggs, mixing well after each addition.
- Pour the filling over the crust, place the pan in a larger roasting pan, and fill with hot water halfway.
- Bake for 85 minutes. Leave the oven door ajar to cool for 10-15 minutes before removing the cheesecake.
- Let the cheesecake cool for 1 hour, then refrigerate for at least 6 hours before serving.
- Whip the heavy cream to stiff peaks and frost the cheesecake before serving.
