Ingredients

  • 24 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 cup granulated sugar
  • 4 large eggs

Instructions

  1. Preheat your oven to 325°F (163°C) and grease your springform pan.
  2. In a bowl, combine the graham cracker crumbs, dark brown sugar, molasses, melted butter, and spices until well mixed.
  3. Press the mixture evenly into the bottom and slightly up the sides of the pan.
  4. In another bowl, beat the cream cheese until fluffy, then gradually add the sugar and eggs, mixing well after each addition.
  5. Pour the filling over the crust, place the pan in a larger roasting pan, and fill with hot water halfway.
  6. Bake for 85 minutes. Leave the oven door ajar to cool for 10-15 minutes before removing the cheesecake.
  7. Let the cheesecake cool for 1 hour, then refrigerate for at least 6 hours before serving.
  8. Whip the heavy cream to stiff peaks and frost the cheesecake before serving.
