  • 1 1/2 cups crushed gingerbread cookies (about 1012 cookies)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • 1/4 cup molasses
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan. In a medium bowl, combine crushed gingerbread cookies, sugar, cinnamon, and ginger. Stir in melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 10-12 minutes, then remove and cool.
  2. Beat the cream cheese and sugar together until smooth. Add vanilla, cinnamon, ginger, and nutmeg. Mix in eggs one at a time, then add sour cream, heavy cream, molasses, and flour. Beat until smooth.
  3. Pour the cheesecake filling over the cooled crust. Bake at 325°F for 50-60 minutes, or until the center is set but slightly jiggly. Cool the cheesecake in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours, or overnight.
  4. Beat softened cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla, then add heavy cream to reach desired consistency.
  5. Once the cheesecake is chilled, spread the cream cheese frosting over the top. Garnish with ground cinnamon or cookie crumbs. Slice and enjoy!
