Instructions
- Scrub, peel, and dry the potatoes. Grate the potatoes and onion into a bowl, squeezing out the excess moisture.
- In a mixing bowl, combine grated potatoes, onion, salt, pepper, flour, and egg. Stir gently until just mixed.
- Heat about 1/4 inch of oil in a large frying pan over medium heat for 3-5 minutes.
- Scoop 2 tablespoons of batter per pancake into the pan, flattening slightly. Fry for 3-4 minutes on each side.
- Transfer cooked pancakes to a paper towel-lined plate to drain excess oil. Keep warm in a 200°F (93°C) oven if needed.
- Serve hot, pairing with toppings like applesauce or sour cream.
