Description

French Onion Chicken Orzo Casserole is a comforting dish that combines tender chicken, creamy orzo, and caramelized onions, topped with crispy fried onions.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 large onions, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup French fried onions (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
  3. Season chicken breasts with salt, pepper, and garlic powder. In the same skillet, sear the chicken for about 5 minutes on each side until golden brown. Remove from heat and let it rest.
  4. In a separate pot, bring chicken broth to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
  5. In a large bowl, combine caramelized onions, cooked orzo, heavy cream, dried thyme, shredded mozzarella, and Gruyère cheese. Mix well.
  6. Cut the chicken into bite-sized pieces and add them to the orzo mixture. Stir until well combined.
  7. Pour the mixture into a greased 9×13-inch baking dish. Spread it out evenly.
  8. Sprinkle French fried onions on top of the casserole for added crunch.
  9. Place in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
  10. Remove from the oven and let it cool for about 10 minutes before serving.
