- 1 pound boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 large onions, sliced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded Gruyère cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup French fried onions (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
- Season chicken breasts with salt, pepper, and garlic powder. In the same skillet, sear the chicken for about 5 minutes on each side until golden brown. Remove from heat and let it rest.
- In a separate pot, bring chicken broth to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine caramelized onions, cooked orzo, heavy cream, dried thyme, shredded mozzarella, and Gruyère cheese. Mix well.
- Cut the chicken into bite-sized pieces and add them to the orzo mixture. Stir until well combined.
- Pour the mixture into a greased 9×13-inch baking dish. Spread it out evenly.
- Sprinkle French fried onions on top of the casserole for added crunch.
- Place in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for about 10 minutes before serving.

- Feel free to add other vegetables for more flavor.
