- 1 cup fresh clementine juice (about 4–6 clementines)
- ½ cup simple syrup
- 2 cups champagne or sparkling wine
- 1 cup soda water
- Fresh mint leaves for garnish
Instructions
- Prepare simple syrup by combining equal parts sugar and water (1 cup each) in a saucepan over medium heat. Stir until dissolved and let cool.
- Juice the clementines until you have 1 cup of fresh juice. Strain if desired.
- In a large pitcher, mix the clementine juice with simple syrup.
- Fill glasses with ice, then pour in equal parts of the clementine mixture and champagne until two-thirds full.
- Top each glass with soda water and stir gently.
- Garnish with fresh mint leaves before serving.
