- 3 large eggs
- 1/2 cup melted butter
- 1/4 cup apricot jam
- 1 cup marzipan (for topping)
- 1 cup fondant (for decoration)
Instructions
- Prepare the Fruit (15 minutes): Chop dried fruits and nuts. Soak dried fruits in warm water for 10 minutes to soften.
- Preheat the Oven (5 minutes): Set the oven to 350°F (175°C).
- Make the Cake Batter (15-20 minutes): In a bowl, combine flour, baking powder, spices, and salt. In another bowl, whisk eggs, maple syrup, and melted butter. Combine wet and dry ingredients, then fold in fruits and nuts.
- Bake the Cake (30-35 minutes): Pour batter into a baking tray. Bake until golden brown and a toothpick comes clean. Check at 25 minutes to avoid overbaking.
- Brush with Apricot Jam (5 minutes): Once cool, brush the top with apricot jam.
- Add the Marzipan Layer (10 minutes): Roll out marzipan over the cake.
- Cover with Fondant (15 minutes): Roll out fondant and cover the cake smoothly.
- Decorate the Cake (30 minutes): Add icing or edible decorations.
