Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup melted butter
  • 1/4 cup apricot jam
  • 1 cup marzipan (for topping)
  • 1 cup fondant (for decoration)

Instructions

  1. Prepare the Fruit (15 minutes): Chop dried fruits and nuts. Soak dried fruits in warm water for 10 minutes to soften.
  2. Preheat the Oven (5 minutes): Set the oven to 350°F (175°C).
  3. Make the Cake Batter (15-20 minutes): In a bowl, combine flour, baking powder, spices, and salt. In another bowl, whisk eggs, maple syrup, and melted butter. Combine wet and dry ingredients, then fold in fruits and nuts.
  4. Bake the Cake (30-35 minutes): Pour batter into a baking tray. Bake until golden brown and a toothpick comes clean. Check at 25 minutes to avoid overbaking.
  5. Brush with Apricot Jam (5 minutes): Once cool, brush the top with apricot jam.
  6. Add the Marzipan Layer (10 minutes): Roll out marzipan over the cake.
