Detroit Style Pizza with Crispy Cheese Crust Recipe

Description

This authentic Detroit-Style Pizza features a thick, chewy crust baked in a metal pan with cheese pressed against the edges for a crispy, lacy cheese crust. Topped with pepperoni and marinara sauce, finished with garlic basil oil.


Ingredients

  • 2¼ cups All purpose flour (300 grams)
  • 1¼ tsp Kosher salt (7 grams)
  • 1¼ tsp Instant yeast (4 grams)
  • 1½ tbsp Extra virgin olive oil (18 grams)
  • 1 cup Lukewarm water (250 grams)
  • 1 tsp Butter
  • 2 tbsp Extra virgin olive oil
  • 2 cups Cheese, cubed (Wisconsin Brick Cheese or Low-Moisture Mozzarella)
  • 1 cup Pepperoni
  • 1½ cups Pizza or Marinara Sauce
  • ¼ cup Basil leaves
  • 12 Garlic cloves
  • 3 tbsp Olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine flour, kosher salt, instant yeast, extra virgin olive oil, and lukewarm water. Mix until a shaggy dough forms. Cover and rest for 30 minutes.
  2. Wet your hands and fold the dough from one side to another. Rotate the bowl and repeat three more times. Cover and rest for another 30 minutes.
  3. Repeat the stretch and fold process every 30 minutes for a total of 3 to 4 rounds over 2 hours.
  4. Grease a baking tray with butter and olive oil. Transfer dough to pan, fold gently, flip so seam is down. Cover and let it rise for 1.5 to 2 hours.
  5. Preheat oven to 450°F (230°C).
  6. If needed, stretch dough to fill the pan. Punch out air pockets.
  7. Distribute cubed cheese over dough, pressing some against the edges.
  8. Layer pepperoni slices evenly on top of cheese.
  9. Bake pizza on the bottom rack for about 15 minutes.
  10. Remove pizza, spoon sauce over the top, leaving some cheese and pepperoni exposed.
  11. Return pizza to oven and bake for another 5 to 8 minutes until edges are golden and cheese is bubbly.
  12. Blend basil, garlic, olive oil, salt, and pepper in a food processor to create oil.
  13. Loosen pizza from edges of the pan. Transfer to a cooling rack. Drizzle garlic basil oil over the top.
  14. Slice pizza into six pieces and enjoy hot.
