Description

A flavorful and satisfying keto-friendly taco casserole packed with ground beef and cauliflower rice.


Ingredients

  • 1 lb ground beef
  • 2 cups cauliflower rice
  • 1 cup shredded cheese
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 diced onion
  • 1 bell pepper (optional)
  • Olive oil (for cooking)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and brown the ground beef.
  3. Drain excess fat and add diced onions and bell peppers; sauté until softened.
  4. Stir in taco seasoning, diced tomatoes, and cauliflower rice; mix well.
  5. In a baking dish, layer half of the beef mixture and half of the cheese; repeat layers.
  6. Bake in the oven for 25-30 minutes until bubbling and golden.

Notes

Optional toppings include sour cream and avocado. Can easily be modified for dietary preferences.
