- 1 lb ground beef
- 2 cups cauliflower rice
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 diced onion
- 1 bell pepper (optional)
- Olive oil (for cooking)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and brown the ground beef.
- Drain excess fat and add diced onions and bell peppers; sauté until softened.
- Stir in taco seasoning, diced tomatoes, and cauliflower rice; mix well.
- In a baking dish, layer half of the beef mixture and half of the cheese; repeat layers.
- Bake in the oven for 25-30 minutes until bubbling and golden.
Notes
Optional toppings include sour cream and avocado. Can easily be modified for dietary preferences.
