- 4 cups frozen corn, thawed
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup Cotija cheese, crumbled
- 1/2 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely diced
- 1 teaspoon chili powder
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
- In a large skillet over medium-high heat, add the corn and cook for 5-7 minutes until slightly charred and heated through.
- Transfer the cooked corn to a large mixing bowl. Allow it to cool slightly.
- Add mayonnaise, sour cream, Cotija cheese, cilantro, garlic, jalapeño, chili powder, and lime juice to the bowl with the corn.
- Mix everything thoroughly until well combined. Season with salt and pepper to taste.
- Transfer the dip to a serving dish. Garnish with extra Cotija cheese, cilantro, and a sprinkle of chili powder, if desired. Serve with tortilla chips.
