Ingredients

  • 4 cups frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup Cotija cheese, crumbled
  • 1/2 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely diced
  • 1 teaspoon chili powder
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. In a large skillet over medium-high heat, add the corn and cook for 5-7 minutes until slightly charred and heated through.
  2. Transfer the cooked corn to a large mixing bowl. Allow it to cool slightly.
  3. Add mayonnaise, sour cream, Cotija cheese, cilantro, garlic, jalapeño, chili powder, and lime juice to the bowl with the corn.
  4. Mix everything thoroughly until well combined. Season with salt and pepper to taste.
  5. Transfer the dip to a serving dish. Garnish with extra Cotija cheese, cilantro, and a sprinkle of chili powder, if desired. Serve with tortilla chips.
