  • 1 cup cornflour
  • 1 tablespoon all-purpose flour
  • 1 teaspoon baking powder

  • 2 eggs, beaten
  • Oil for frying
  • 23 dried red chilies, chopped
  • 1 tablespoon ginger, minced

  • 1 onion, thinly sliced
  • 1 bell pepper, sliced
  • 23 tablespoons soy sauce
  • 1 tablespoon red chili sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • Spring onions, for garnish

Instructions

  1. Prepare Chicken: In a bowl, combine diced chicken, cornflour, all-purpose flour, baking powder, salt, black pepper, and garlic powder. Mix well until the chicken is evenly coated.
  2. Add Eggs: Pour the beaten eggs into the chicken mixture and stir until well combined.
  3. Heat Oil: In a frying pan, heat enough oil over medium heat for deep-frying. You’ll need about an inch of oil in the pan.
  4. Fry Chicken: Once the oil is hot, carefully place the coated chicken pieces in the oil. Fry until golden brown and crispy, about 5-7 minutes. Make sure not to overcrowd the pan.
  5. Drain Excess Oil: Remove the fried chicken and place it on paper towels to absorb any excess oil.
  6. Prepare Sauce: In a separate pan, heat a tablespoon of oil. Add the dried red chilies, minced ginger, and minced garlic. Sauté until aromatic.
  7. Add Vegetables: Toss in the sliced onion and bell pepper. Cook for another 2-3 minutes until they are tender but still crisp.
  8. Combine Ingredients: Reduce the heat and add the soy sauce, red chili sauce, vinegar, and sugar to the pan. Stir until well combined.
