Ingredients

  • Sturdy tortilla chips
  • 1 lb ground beef (or beans for meatless option)
  • 2 cups shredded cheddar cheese
  • 1 diced tomato
  • 1 diced bell pepper
  • 2 sliced scallions
  • Chopped fresh cilantro
  • Sour cream or Greek yogurt for serving
  • Chili powder, cumin, oregano, salt, and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef with chili powder, cumin, oregano, salt, and pepper for about 8–10 minutes.
  2. Preheat your air fryer to 320°F (160°C).
  3. Line the air fryer basket with parchment paper and layer half of the tortilla chips at the bottom.
  4. Top with half the shredded cheddar cheese, half the diced tomato, half the diced bell pepper, and half the cooked ground beef.
  5. Repeat the layering process with the remaining chips, cheese, tomato, pepper, and beef.
  6. Cook in the air fryer for 5 minutes, or until the cheese is melted and bubbly.
  7. Remove carefully and top with sliced scallions and chopped cilantro. Serve immediately with sour cream or your favorite toppings.
