- 4 medium potatoes, cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 tablespoon ghee (or butter)
Instructions
- Wash, peel, and cut the potatoes into 1/2-inch cubes.
- Rinse the cubed potatoes under cold water to remove excess starch, then dry thoroughly.
- Toss the potatoes with olive oil, salt, pepper, paprika, and garlic powder.
- Spread the potatoes in a single layer in the air fryer and cook at 400°F for 15 minutes, shaking every 5 minutes.
- After 15 minutes, add the onion, bell pepper, and ghee, then cook for an additional 10–12 minutes, stirring occasionally.
- Let the fries rest for 2 minutes, then serve immediately with flaky salt and herbs.
Notes
For extra crispiness, soak the potatoes in cold water for 20–30 minutes before drying. Adjust seasonings to your liking and experiment with different herbs or spices.
