Ingredients

  • 4 medium zucchini, spiralized
  • 2 cups heavy cream
  • 1 cup parmesan cheese, grated
  • 1 lb sausage, sliced (such as Kiolbassa)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 cups spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium heat.
  2. Add sliced sausage and cook for 10 minutes until browned, then set aside.
  3. Sauté garlic in the same skillet for 1 minute until fragrant.
  4. Pour in heavy cream, chicken broth, Italian seasoning, and parmesan cheese; whisk until bubbling.
  5. Add spinach and sun-dried tomatoes; simmer until spinach wilts.
  6. Reintroduce sausage and zucchini noodles; cook for 3 minutes until heated through.

Notes
