  • 3 cups Spinach, fresh, roughly chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and reserve 1/2 cup of the pasta water.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the pumpkin puree and heavy cream. Stir to combine and simmer for about 5 minutes.
  4. Season the sauce with nutmeg, salt, and pepper to taste.
  5. Gently mix in the chopped spinach and let it wilt for 2-3 minutes.
  6. Fold in the cooked gnocchi. Add reserved pasta water as needed to reach desired sauce consistency.
  7. Serve the creamy pumpkin gnocchi hot, garnished with extra Parmesan cheese and red pepper flakes if desired.
