Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and reserve 1/2 cup of the pasta water.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.
- Pour in the pumpkin puree and heavy cream. Stir to combine and simmer for about 5 minutes.
- Season the sauce with nutmeg, salt, and pepper to taste.
- Gently mix in the chopped spinach and let it wilt for 2-3 minutes.
- Fold in the cooked gnocchi. Add reserved pasta water as needed to reach desired sauce consistency.
- Serve the creamy pumpkin gnocchi hot, garnished with extra Parmesan cheese and red pepper flakes if desired.
