A comforting bowl of flavorful Creamy Keto Italian Sausage Soup, perfect for busy weeknights and low-carb diets.


Ingredients

  • 1 tbsp butter
  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 1 lb Italian sausage, casings removed
  • 3 cups chicken bone broth
  • 2 medium zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1/4 tsp cayenne pepper
  • 1 cup cream cheese
  • 2 cups fresh spinach, chopped

Instructions

  1. In a large pot, melt the butter over medium-high heat. Add onion, garlic, and Italian sausage; cook until the meat is browned and onion is soft.
  2. Pour in the chicken bone broth and add zucchini, diced tomatoes, basil, oregano, bay leaf, and cayenne pepper. Bring to a boil, then reduce heat to simmer.
  3. Blend 1 cup of the broth with cream cheese until smooth, then stir into the soup.
  4. Mix in chopped spinach until wilted before serving.

Notes

Feel free to adjust the seasonings and vegetables according to your taste. To make it dairy-free, substitute cream cheese with coconut cream.
