- 1 tbsp butter
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 1 lb Italian sausage, casings removed
- 3 cups chicken bone broth
- 2 medium zucchini, diced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 bay leaf
- 1/4 tsp cayenne pepper
- 1 cup cream cheese
- 2 cups fresh spinach, chopped
Instructions
- In a large pot, melt the butter over medium-high heat. Add onion, garlic, and Italian sausage; cook until the meat is browned and onion is soft.
- Pour in the chicken bone broth and add zucchini, diced tomatoes, basil, oregano, bay leaf, and cayenne pepper. Bring to a boil, then reduce heat to simmer.
- Blend 1 cup of the broth with cream cheese until smooth, then stir into the soup.
- Mix in chopped spinach until wilted before serving.
Notes
Feel free to adjust the seasonings and vegetables according to your taste. To make it dairy-free, substitute cream cheese with coconut cream.
