Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion
  • 4 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 pinch cinnamon
  • 1 pound ground pork
  • 1 teaspoon sea salt
  • 1 cup butternut squash
  • 4 cups spinach
  • 1 can coconut milk
  • 2 tablespoons tapioca starch
  • 1/2 cup water

Instructions

  1. Heat the olive oil in a large stockpot over medium heat. Once shimmering, add the sliced onion, crushed garlic, and dried herbs. Sauté for 2-3 minutes until onions are translucent.
  2. Add the ground pork and sea salt, stirring occasionally until the pork is browned, about 5-7 minutes.
  3. Reduce heat to low and stir in cubed butternut squash and coconut milk. Cook for 12-15 minutes, stirring occasionally until squash starts to soften.
  4. Add the spinach one cup at a time, mixing thoroughly. Cook for an additional 5-7 minutes until wilted.
  5. Combine tapioca starch with water to create a slurry. Pour into the pot, stirring continuously until the sauce thickens.
  6. Taste and adjust salt if necessary. Remove from heat, serve warm, and enjoy!
