- 2 tablespoons extra virgin olive oil
- 1 small yellow onion
- 4 cloves garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 pinch cinnamon
- 1 pound ground pork
- 1 teaspoon sea salt
- 1 cup butternut squash
- 4 cups spinach
- 1 can coconut milk
- 2 tablespoons tapioca starch
- 1/2 cup water
Instructions
- Heat the olive oil in a large stockpot over medium heat. Once shimmering, add the sliced onion, crushed garlic, and dried herbs. Sauté for 2-3 minutes until onions are translucent.
- Add the ground pork and sea salt, stirring occasionally until the pork is browned, about 5-7 minutes.
- Reduce heat to low and stir in cubed butternut squash and coconut milk. Cook for 12-15 minutes, stirring occasionally until squash starts to soften.
- Add the spinach one cup at a time, mixing thoroughly. Cook for an additional 5-7 minutes until wilted.
- Combine tapioca starch with water to create a slurry. Pour into the pot, stirring continuously until the sauce thickens.
- Taste and adjust salt if necessary. Remove from heat, serve warm, and enjoy!
