Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 cup uncooked pasta (such as rotini or fusilli)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions and minced garlic to the pot. Sauté until the onions are translucent, about 5 minutes.
  3. Stir in the shredded chicken and cook for another 3 minutes.
  4. Add the chicken broth to the pot and bring it to a simmer.
  5. Once the broth is simmering, add the uncooked pasta to the pot. Cook according to the package instructions, usually about 8-10 minutes.
  6. After the pasta is cooked, lower the heat and stir in the heavy cream until well combined.
  7. Gently fold in the chopped spinach, allowing it to wilt in the warm soup.
  8. Add the Italian seasoning, salt, and pepper to taste. Stir well.
  9. Remove from heat and ladle the soup into bowls. Top with grated Parmesan cheese if desired.
