- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 cup uncooked pasta (such as rotini or fusilli)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onions and minced garlic to the pot. Sauté until the onions are translucent, about 5 minutes.
- Stir in the shredded chicken and cook for another 3 minutes.
- Add the chicken broth to the pot and bring it to a simmer.
- Once the broth is simmering, add the uncooked pasta to the pot. Cook according to the package instructions, usually about 8-10 minutes.
- After the pasta is cooked, lower the heat and stir in the heavy cream until well combined.
- Gently fold in the chopped spinach, allowing it to wilt in the warm soup.
- Add the Italian seasoning, salt, and pepper to taste. Stir well.
- Remove from heat and ladle the soup into bowls. Top with grated Parmesan cheese if desired.

- This soup can be stored in the refrigerator for up to 3 days.
- You can use rotisserie chicken for a quicker option.
