Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked pasta (e.g., rotini or penne)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and sauté until browned, about 5-7 minutes. Remove the chicken and set it aside.
  3. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are soft. Then, add the minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring it to a boil.
  5. Once boiling, add the uncooked pasta and dried thyme and oregano. Reduce the heat and let it simmer for about 10 minutes or until the pasta is cooked al dente.
  6. Stir in the heavy cream and the cooked chicken. Allow it to heat through for about 5 minutes.
  7. Taste and adjust the seasoning with salt and pepper as needed.
  8. Remove from heat. Serve hot, garnished with fresh parsley.
