- 1.5 pounds boneless skinless chicken breasts (diced into bite-sized pieces)
- Salt and Pepper (for seasoning the chicken)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 16 ounces baby portabella mushrooms
- 1 cup white onion (diced small)
- 3–4 cloves garlic (finely minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 3 tablespoons all-purpose flour
- 1.5 cups chicken broth
- 1 cup half-and-half
- 1 teaspoon Worcestershire sauce
- Salt and black pepper (for seasoning the soup)
- 2–3 cups loosely packed fresh spinach leaves or kale leaves (optional)
- 1 cup frozen peas (optional)
- Fresh parsley (optional for garnishing)
Instructions
- Dice the chicken into bite-sized pieces.
- In a large skillet or Dutch oven, heat olive oil, add chicken, and season with salt and pepper. Cook for about 2-3 minutes to sear the chicken, then remove and set aside.
- Add butter, mushrooms, and diced onions to the skillet. Reduce heat to medium-low and sauté for 6-7 minutes until mushrooms are tender.
- Add garlic, thyme, dried parsley, and flour. Cook for 1-2 minutes, stirring continuously to avoid lumps.
- Slowly add chicken broth while stirring continuously.
- Slowly add half-and-half and Worcestershire sauce. Simmer for 3-4 minutes until slightly thickened.
- Add chicken back in, cover, reduce heat to low, and simmer for 15 minutes or until chicken is cooked through.
- Uncover, taste the soup, and adjust seasoning with salt and pepper as needed.
- If desired, add fresh spinach, kale, or peas and allow to soften for about five minutes.
- To adjust thickness, simmer uncovered for a few minutes or add more broth/half-and-half as needed.
- Garnish with fresh parsley and serve immediately.
Notes
- Use boneless skinless chicken thighs as a substitute for breasts if preferred.
- Ensure to not overcook the chicken during the initial searing stage.
- For a thicker soup, simmer uncovered.
- Seasoning is crucial. Adjust salt and pepper to taste.
