Ingredients

  • 1.5 pounds boneless skinless chicken breasts (diced into bite-sized pieces)
  • Salt and Pepper (for seasoning the chicken)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 16 ounces baby portabella mushrooms
  • 1 cup white onion (diced small)
  • 34 cloves garlic (finely minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 3 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup half-and-half
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper (for seasoning the soup)
  • 23 cups loosely packed fresh spinach leaves or kale leaves (optional)
  • 1 cup frozen peas (optional)
  • Fresh parsley (optional for garnishing)

Instructions

  1. Dice the chicken into bite-sized pieces.
  2. In a large skillet or Dutch oven, heat olive oil, add chicken, and season with salt and pepper. Cook for about 2-3 minutes to sear the chicken, then remove and set aside.
  3. Add butter, mushrooms, and diced onions to the skillet. Reduce heat to medium-low and sauté for 6-7 minutes until mushrooms are tender.
  4. Add garlic, thyme, dried parsley, and flour. Cook for 1-2 minutes, stirring continuously to avoid lumps.
  5. Slowly add chicken broth while stirring continuously.
  6. Slowly add half-and-half and Worcestershire sauce. Simmer for 3-4 minutes until slightly thickened.
  7. Add chicken back in, cover, reduce heat to low, and simmer for 15 minutes or until chicken is cooked through.
  8. Uncover, taste the soup, and adjust seasoning with salt and pepper as needed.
  9. If desired, add fresh spinach, kale, or peas and allow to soften for about five minutes.
  10. To adjust thickness, simmer uncovered for a few minutes or add more broth/half-and-half as needed.
  11. Garnish with fresh parsley and serve immediately.

Notes

  • Use boneless skinless chicken thighs as a substitute for breasts if preferred.
  • Ensure to not overcook the chicken during the initial searing stage.
  • For a thicker soup, simmer uncovered.
  • Seasoning is crucial. Adjust salt and pepper to taste.
