- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 8 oz brie cheese, cut into pieces
- 1/2 cup panko breadcrumbs
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, heat olive oil over medium heat and add cranberries, stirring until they begin to soften (about 5 minutes).
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken pocket with brie cheese and cooled cranberry mixture.
- In a large oven-safe skillet, sear each chicken breast on both sides over medium-high heat until golden brown (about 2-3 minutes per side).
- Combine panko breadcrumbs with melted butter and sprinkle over the stuffed chicken.
- Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Notes
For added flavor, consider marinating the chicken in lemon juice for a couple of hours before cooking. You can also top with toasted nuts for extra crunch.
