Description

An elegant yet approachable holiday main dish featuring juicy chicken stuffed with tangy cranberry sauce and creamy brie cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz brie cheese, sliced
  • 1/2 cup cranberry sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • Salt and pepper to taste
  • Toothpicks for securing chicken

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Stuff each chicken breast with slices of brie and a heaping tablespoon of cranberry sauce.
  4. Secure openings with toothpicks and season with salt, pepper, and chopped rosemary.
  5. Heat olive oil in a large skillet over medium-high heat and sear chicken breasts for 2-3 minutes on each side until golden.
  6. Transfer chicken to the baking dish, top with minced garlic, and bake for 25 minutes or until chicken is cooked through (internal temperature should reach 165°F).
  7. Remove toothpicks and let rest for 5-7 minutes before serving.

Notes

Practice the pocket cut on one breast first to gain confidence. This dish can easily be adapted with different cheeses or fruits.
