- 4 boneless, skinless chicken breasts
- 8 oz brie cheese, sliced
- 1/2 cup cranberry sauce
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp chopped fresh rosemary
- Salt and pepper to taste
- Toothpicks for securing chicken
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Cut a pocket into each chicken breast without slicing all the way through.
- Stuff each chicken breast with slices of brie and a heaping tablespoon of cranberry sauce.
- Secure openings with toothpicks and season with salt, pepper, and chopped rosemary.
- Heat olive oil in a large skillet over medium-high heat and sear chicken breasts for 2-3 minutes on each side until golden.
- Transfer chicken to the baking dish, top with minced garlic, and bake for 25 minutes or until chicken is cooked through (internal temperature should reach 165°F).
- Remove toothpicks and let rest for 5-7 minutes before serving.
Notes
Practice the pocket cut on one breast first to gain confidence. This dish can easily be adapted with different cheeses or fruits.
