- 4 boneless, skinless chicken breasts
- 8 oz brie cheese, sliced
- 1/2 cup cranberry sauce
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice the chicken breasts lengthwise to create a pocket.
- Stuff each pocket with brie cheese and a spoonful of cranberry sauce.
- Season the outside of the chicken with salt and pepper.
- In a skillet, heat olive oil over medium heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden.
- Transfer the chicken to a baking dish and top with breadcrumbs.
- Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish with fresh herbs if desired and serve.
Notes
For added flavor, try mixing in nuts or fresh herbs into the cranberry sauce. Ensure the chicken pockets are tightly sealed to avoid leakage during cooking.
