Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onions, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables begin to soften.
  2. Place the chicken breasts in the pot and pour in the chicken broth. Bring to a boil, then reduce heat to a simmer.
  3. Add dried thyme, parsley, salt, black pepper, and optional red pepper flakes to the pot. Stir well to combine.
  4. Simmer the chicken for about 20 minutes, or until fully cooked. Remove the chicken from the pot and set it aside to cool slightly.
  5. While the chicken cools, add the egg noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
  6. Once the chicken has cooled, shred it into bite-sized pieces using two forks.
  7. Return the shredded chicken to the pot and pour in the heavy cream. Stir the soup until well combined and heated through.
  8. Taste the soup and adjust seasoning if necessary. Add more salt, pepper, or herbs to your liking.
