- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups egg noodles
- 1 cup carrots, diced

- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables begin to soften.
- Place the chicken breasts in the pot and pour in the chicken broth. Bring to a boil, then reduce heat to a simmer.
- Add dried thyme, parsley, salt, black pepper, and optional red pepper flakes to the pot. Stir well to combine.
- Simmer the chicken for about 20 minutes, or until fully cooked. Remove the chicken from the pot and set it aside to cool slightly.
- While the chicken cools, add the egg noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
- Once the chicken has cooled, shred it into bite-sized pieces using two forks.
- Return the shredded chicken to the pot and pour in the heavy cream. Stir the soup until well combined and heated through.
- Taste the soup and adjust seasoning if necessary. Add more salt, pepper, or herbs to your liking.
