- 2 celery stalks, diced

Instructions
- Chop the vegetables and mince the garlic.
- In a large pot over medium heat, add a splash of olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic for another minute.
- Stir in carrots and celery; cook until softened (about 5 minutes).
- Add chicken breasts and pour in the chicken broth. Season with oregano and black pepper; bring to a gentle simmer.
- Cover and simmer for 20-30 minutes until chicken reaches an internal temperature of at least 165°F (75°C).
- Remove the chicken, shred it, return it to the pot and stir before serving.
